6 Camping Barbecue Recipes to Consider

There are different variations of camping, but among them all, barbecue camping is the best. If you are planning to go camping with your friends, it is always cool to have a barbecue because when you are out there in the wilderness, regardless of whether it is by a lake, in the woodlands or even in a campsite, you will be able to cook nice food with the barbecues. Besides being a fun activity, it is also a great way of boosting the morale of the people that you would have gone camping with. There are so many recipes that you can enjoy cooking with your friends at the campsite. The following are just but a few of them.

1. Virginia Barbecue Chicken

Ingredients:

  • 1 cup of oil
  • 1 teaspoon of black pepper
  • 1 1/4 cups of vinegar
  • 2 teaspoons of salt
  • 1 teaspoon of garlic salt
  • 2 tablespoons of poultry seasoning
  • 1 tablespoon of lemon juice
  • Chicken piece

How to Prepare:

  1. Take all of the ingredients above, except chicken, and put them in a hand blender to mix them. (A hand blender is the best for mixing the ingredients because it prevents them from separating as much.)
  2. Next, marinade about 5 to 10 chicken halves or 12 to 20 drumsticks using a small amount of the mixture for a couple hours.
  3. Grill the chicken over medium heat coals until the pieces start basting often or test done. For the best results, use a grilling pit and then allow the chicken to slow cook for a couple hours.

2. Camp Fire Potatoes

Ingredients:

  • 6 medium potatoes
  • 2 bunches of green onions (sliced)
  • 8 ounces of cheddar cheese (grated or cubed)
  • 1/2 lb of bacon (fried and crumbled)
  • 1/2 cup of margarine (sliced)
  • Salt and pepper (to taste)

How to Prepare:

  1. First, you will need to boil the potatoes until they become fork tender. Be careful not to overcook the potatoes. When they are ready, peel off the skin and then slice them into 1/2 inch slices.
  2. Preheat your oven to 350 degrees and grease a two-quart casserole dish or an 8-inch square pan. Layer half of the potatoes, margarine, green onions, bacon, salt and pepper and cheese on the casserole dish or pan.
  3. Repeat the layers while making sure that you finish with cheese and bacon.
  4. Bake the potatoes uncovered for about 20 minutes or until they become bubbly.

NB: If you are making this recipe on a gas grill, the following is what you will need to do:

Take all of the ingredients and then put them in a pouch that is made up of two layers of heavy duty foil and greased inside with cooking spray. Make sure that you do it carefully to prevent the bottom of the potatoes from burning.

3. Barbecued Pesto Dish

Ingredients:

  • 2 garlic cloves
  • 1 cup of fresh basil leaf
  • 1/2 cup of roasted cashews
  • 1/4 cup of parmesan cheese
  • 1/2 cup of olive oil
  • 1 tablespoon of lemon juice
  • 4 salmon steaks (or 4 tuna steaks)

How to Prepare:

  1. First of all, you will need to put garlic, basil and cashews into a food processor. While these ingredients are being processed, take the oil and pour it in a steady stream through the top until is it well blended.
  2. After that, add parmesan to the food process and then process for about 15 seconds.
  3. Take the pesto and spread it over both sides of the fish. After doing that, wrap the fish securely in a piece of foil that has been buttered.
  4. Put the fish on the pre-heated grill over medium heat for about 15 to 20 minutes or until it is cooked through.

4. Turkey Barbecue Sandwich

Ingredients:

  • 2 tablespoons of butter
  • 1 (8 ounce) can of tomato sauce (unsalted)
  • 1/4 cup of chopped onion
  • 3 tablespoons of Worcestershire sauce
  • 1 cup of ketchup
  • 3 tablespoons of cider vinegar
  • 1/2 teaspoon of prepared yellow mustard
  • 1 tablespoon of brown sugar
  • 1/2 cup of water (or 1/2 cup of low sodium chicken broth)
  • 1/8 teaspoon of ground cinnamon
  • 8 soft hamburger buns
  • 4 cups of cooked turkey (skinless and cut into small cubes)

How to Prepare:

  1. Heat a medium-sized saucepan over medium high heat and then melt the butter. Add the onions to the pan and sauté until they are well softened.
  2. Next, take the remaining ingredients, except the turkey and buns, and add them to the pan. You will need to reduce the heat to low and then cover and simmer for about 30 minutes. After that, taste the dish for seasoning.
  3. Put the turkey in a large skillet over medium low heat and then add enough sauce in order to moisten the meat generously. Be careful not to make the meat soupy. Cover and cook the turkey for about 10 minutes or until it is hot. Serve immediately on hamburger buns.

5. Beef Barbecue

Ingredients:

  • 2 tablespoons of sugar
  • 1/8 cup of Worcestershire sauce
  • 1/4 cup of vinegar
  • 1 pint of tomatoes
  • 1 small onion (chopped)
  • 1 (4 ounce) can of tomato sauce (or tomato paste)
  • 1 garlic clove (chopped, optional)
  • 1 lb of beef (cubed)
  • 1/4 cup of beer or red wine (optional)

How to Prepare:

  1. Simply put all of the ingredients in saucepan and then cook for about 4 hours while stirring often.
  2. After four hours, serve the beef barbecue on hamburger rolls and then top it with coleslaw.

6. Hamburger Barbecue

Ingredients:

  • 2 1/2 lbs of ground beef (cooked and drained)
  • 2 tablespoons of yellow mustard
  • 1 small onion (diced)
  • 2 tablespoons of white vinegar
  • 4 tablespoons of sugar
  • 1/2 cup of tomato ketchup
  • 3/4 cup of tomato juice

How to Prepare:

  1. First, you will need to mix the cooked ground beef with onion in a large frying pan.
  2. In a measuring cup or bowl, mix together the remaining ingredients in order to make a sauce.
  3. Put the sauce over the ground beef and onion mixture and then cook on medium high until it is well heated through. Be sure to stir occasionally.
  4. Depending on how dry or runny you like your hamburger barbecue, you can adjust the amount of tomato juice used as you wish. Serve on regular bread or hamburger rolls.

When cooking the above-mentioned in your barbecue, be sure not to burn them. Burnt food does not only taste bad, but it also produces carcinogens, which if you were not aware are responsible for producing cancerous cells in the body.
